Foodborne illnesses are generally infectious diseases that can be transmitted by eating contaminated food. Often the food is contaminated by poor handwashing; however there are many forms of transmission. Foodborne illnesses can be viral in origin, such as Hepatitis A, or bacterial in origin, such as Salmonella and Shigella. Some unusual “pathogens” are called prions, which are protein-based pathogens that often affect brain tissue. This kind of disease becomes foodborne when it infects the brain and other tissues of animals like cows and sheep. When this meat is eaten, humans can develop the disease.
