Tempura is Japanese cuisine. It refers to classic Japanese deep fried batter that is used for seafood or vegetables. The deep fried batter is made from ice cold water, flour, and egg yolks. Small bites of food are dipped in flour and then dipped in batter for about two or three minutes. In high class restaurants, sesame oil or a combination of sesame oil and other types of oil are used. The price of sesame oil is very expensive. Western chefs usually have tempura dishes on the menu. However, this doesn’t bring them the greatest authentic results. This is because they are mistaken about how to mix tempura batter. In classic cooking, the tempura batter must be beaten until it is homogeneous. Good tempura batter is mixed with chopsticks for only a few seconds. In Japan, restaurants specializing in tempura are called tempura_ya and range from inexpensive fast food chains to highly sought after five star restaurants. Many Japanese restaurants offer tempura as part of a set meal or bento which means lunch box. Tempura is used with a combination of other foods. When served over soba which are buckwheat noodles, tempura is called tempura soba. Tempura can be used with seafood like shrimp and crab. Tempura is also used with vegetables such as green peppers, eggplant, and sweet potatoes. It can be used with dessert items such as bananas and ice cream.
