Cassoulet is a part of French cuisine. It is a slowly cooked stew or casserole. This stew is usually made with some type of meat such as pork sausages, mutton, which is a type of lamb, and goose. Cassoulet is served with white haricot beans.

There are many regional varieties of cassoulet in France. One version of this stew comes from Castelnaudary. This region of France considers itself The King of Cassoulet. Cassoulet that is prepared with confit of goose isn’t considered a traditional cassoulet.
